live oysters

our pacific, angassi and sydney rock oysters are harvested from a mixture of estuarine and marine growing areas throughout australia. all oysters are shucked fresh to customers and served with
mignonette dressing and lime wedges,  cucumber salad and avrugar caviar, thai red chilli dressing with deep fried shallots, garlic and coriander.

south american style char grilled skewers of prawns, chicken, lamb and beef with smokey, charred flavours of garlic, cumin, coriander, ginger, peppers and a hint of chilli.
stainless steel swords that are strung with meat and seafood, marinated and grilled and then served theatrically in front of your guests.

moroccan spice

fragrant suckling lamb shoulders with preserved lemon, almonds and spices served with cous cous. low heat and slow cooking infuses the abundance of warm spices and gives the dish great richness.
served with a moroccan bread called khobz, minted yoghurt and harrissa.
